Abstract

In children as in adults, food choices are subject to many influences, which are built and enriched during development. Firstly, the determinants of food choices associated with the intrinsic properties of food will be exposed, by explaining the role of sensory properties (taste, aromas, textures), as well as that of the energy density of the food in the establishment and the maintenance of preferences, food consumption and control of food intake. Secondly, the role of the extrinsic properties of foods, associated with the way of "thinking" the foods will be explained, as for example the cognitive and psychosocial determinants. A common understanding of the effect of these determinants may help to promote the consumption of healthy foods, such as fruits and vegetables, which remains inferior to public health recommendations for children, despite repeated campaigns of consumption promotion.
