Abstract

This paper tackles the question of the performance of local food supply chains (LFCs), i.e. their capacity to respond to the expectations of the actors that invest money, time and energy in them. On the basis of publications which relate these expectations, we argue that the performance of LFCs is both multidimensional (as it entails sustainable development) and multi scale (because it goes from the farm to the levels of territory and the sub-sector). This hypothesis was placed at the heart of the PERFECTO research project that we recently undertook in New Aquitaine. Based largely upon interviews, this project partially validates this hypothesis. All actors involved in LFCs stress the importance of the economic and the social dimension. However, and unexpectedly, improving the environment is seldom evoked as an expectation. Moreover, the structuration of sub-sectors is invariably experienced as a key source of constraints upon the development of LFCs.
