Abstract

Because of recent developments in the conditions of production of cow milks for PDO cheese on the territory of the Massif central, a program of research and development on the use and enhancement of the grasslands was set up, in order to pool knowledge on permanent meadows and boost advices to farmers. A good knowledge of agronomic, ecological potential and in connection with the quality of these grassland-based cheeses appeared to be an asset to meet the challenges arising in the supply chain. On the basis of the monitoring of a network of plots and farms, three innovative tools have been designed (multifunctional typology of meadows, forage practices, multifunctional diagnosis of forage system), to consider, in the future, a better use of grassland resource in this territory of cheese productions. New knowledge on the interactions between the type of prairie, pasture mode and quality of dairy products have also been obtained through an experiment in a controlled environment, to strengthen the links of these PDO cheese productions to their terroirs.
