Condições sanitárias de ostras produzidas e comercializadas em Taperoá, Bahia e o efeito da depuração na redução da carga microbiana

Abstract

Resumo Este estudo teve como objetivo avaliar a qualidade microbiologica da agua e ostras em duas areas de cultivo em Taperoa, Bahia e testar a eficiencia de um sistema de depuracao em pequena escala. Foram realizadas seis coletas mensais de agua e ostras em dois cultivos de ostras (Taperoa e Graciosa) durante o periodo de agosto de 2011 a abril de 2012. A avaliacao da eficiencia da depuracao foi realizada com 10 duzias de ostras durante 24 horas. A media geometrica para os coliformes termotolerantes (CTT) no cultivo Taperoa (71,5 NMP/100 mL de CTT) e cultivo Graciosa (168,3 NMP/100 mL de CTT) mostrou que as areas de cultivo nao sao adequadas para a atividade de ostreicultura. Apenas 66,6% das ostras do cultivo Taperoa e 83% do cultivo Graciosa so poderiam ser liberadas para comercializacao apos tratamento adicional conforme normativa interministerial para moluscos bivalves. Escherichia coli foi evidenciada em 100% das amostras no cultivo Taperoa, sendo isolada Salmonella em 16,7% das amostras de agua. No cultivo Graciosa, E. coli foi confirmada em 16,7% das amostras de agua e em 33,3% das ostras, nao sendo verificada a presenca de Salmonella. O periodo de 24 horas de depuracao nao foi suficiente para eliminar ou reduzir a niveis aceitaveis a carga de CTT nas ostras devendo ser realizados mais estudos de modo a ser elaborado um protocolo eficiente. Abstract This study aimed at evaluating the microbiological quality of water and oysters from two cultivation area in the municipality of Taperoa, Bahia as well as to test the efficiency of a depuration system in small scale. Six collects of water and oysters were made every month in two cultivation area (Taperoa and Graciosa) over a period from August 2011 to April 2012. To evaluate the efficiency of depuration process was used 10 dozens of oysters from each cultivation area during 24 hours. The geometric mean of thermotolerant coliforms  (TTC) in cultive Taperoa (71.5 MPN CTT/100 mL) and in cultive Graciosa (168.3 MPN CTT/100 mL) showed that these areas were not suitable for the ostreiculture activity. The samples of oysters, 66% from cultive Taperoa and 83% of cultive Graciosa, only could be released for commercialization after additional treatment according to Interministerial Instruction. Escherichia coli was confirmed in 100% of the samples from cultive Taperoa, and Salmonella was isolated only in 16.7% of the samples of water. In the cultive Graciosa, E. coli was confirmed in 16.7% of water samples and in 33.3% of oysters. The presence of Salmonella was not verified. The period of 24 hours of depuration was not sufficient to eliminate or reduce to acceptable levels the load of  CTT in oyster samples, further studies should be conducted in order to obtain an efficient protocol.
