This study aimed to examine the chemical profile and antioxidant properties of oil extracted from noble laurel (Laurus nobilis L.) drupes, which is widely used locally in Morocco. The methods employed included the agro-morphological characterization of laurel fruits, vegetable oil extraction of drups, and the determination of its physicochemical properties, as well as the analysis of chemical profiles including fatty acid methyl esters, total phenolic compounds, total flavonoids, and total carotenoids. Antioxidant activities were evaluated using the phosphomolybdate assay and the ferric reducing antioxidant power assay, while principal component analysis (PCA) was used to correlate chemical profiles with antioxidant activities. Result: The results revealed a fatty acid composition including high amounts of linoleic acid (45.09%), α-linolenic acid (24.60%), oleic acid (14.31%), and palmitic acid (10.85%). The oil also exhibited a high content of phenolic compounds (2.165 mg GAE/g) and flavonoids (0.909 mg QE/g), as well as robust reducing capacity against ferric ions and phosphomolybdate. A significant correlation between the chemical profile and antioxidant activity was observed, suggesting that oil extracted from noble laurel drupes could serve as a natural source of antioxidants to prevent damage associated with free radicals.
