The French Fruits and Vegetables supply chain includes many fresh and processed products. It involves various professionals and inter-professionals stakeholders from production, processing and marketing. Its complex structure and its functioning presently experience severe changes required by evolutions of national and international markets and by strong society demands, especially regarding product quality. Analysis of different factors and trends during the last decade generate the following issues: a stable consumption, a better organised production taking into account new society and environment demands, a production volume either stable or declining for the fresh products and often in difficult situation when facing the international competition. To improve the supply chain economy and especially alleviating the present degradation of producers income, it is necessary to reduce production costs thanks to the adoption of new techniques and by targeting higher market prices through valorisation of quality traits. The extra product value based upon quality however requires an actual organisation around the various quality certificates, so that added values could benefit to all stakeholders involved in this improvement procedure.
