Abstract

A collective processing workshop (ATC) is a structure managed by a group of farmers who share their resources to develop equipment necessary for the processing of their products in order to ensure the marketing via food proximity circuits. There are more than 130 of such workshops today in France. The ATC are complex local organizations, asking time and a strong commitment of farmers to succeed: one of the difficulties is the dimension of these economic projects, that are both individual and collective. Therefore, the control of project management in the emergence and launch phases is essential. At the end, the ATC contribute to the construction of more sustainable territorial food systems.
