Abstract

After a brief reminder of the structuring of the French poultry, egg and meat sectors, this document makes a statement of their diversity, with the objective of analyzing its contribution to the overall resilience of the sector. While the egg sector uses only one species, the hen, the meat sector relies on a large diversity of species, even if broiler is the dominant production. The two sectors are marked by a significant diversity of production methods, from intensive to alternative, and of end products, more or less transformed. In the egg sector, there is a tendency to replace conventional furnished cages socalled alternative systems, which are currently growing rapidly. In the meat sector, demand is strong for cut and processed products resulting from intensive production methods, a segment for which imports are important, but the demand of households for products raised under alternative conditions, with access to the outdoor area remains important. Organic production, still minority in poultry meat (1% in 2016), is growing rapidly. In both sectors, the production is divided between highly organized sectors and short circuits. The document then reflects on the strengths and weaknesses brought by this diversity to different levels of the sector and in different territories
