The value of the potato as a source of dietary nitrogen has been examined by several authors, but the interpretation of their results is made difficult, since in nearly all these experiments the total nitrogen only is recorded. The potato tuber contains besides protein a large variety of low-molecular nitrogenous substances, some of little or no nutritive value, and their relative proportions may vary greatly in different samples. Feeding experiments without chemical analysis of the material used will therefore give little information of a useful pharacter.
