This article gives details of the course on "Quantum Matter in optical lattices and high-Q cavities" given at the School of Physics XXVIII at UNAM in 2021. The notes describe useful concepts for analog quantum simulation and details of models in optical lattices and high-Q cavities. The notes are in Spanish. En este artículo se discuten algunos detalles del curso sobre "Materia cuántica en redes ópticas y cavidades de alta reflectancia (Many-body CQED)" de la escuela de verano de Física XVIII (2021) en la UNAM. Se describen conceptos útiles para la simulación cuántica análoga, así como se introducen detalles de modelos de materia cuántica en redes ópticas y en cavidades de alta reflectancia.
