In the present study, an emerging processing technology, namely cold atmospheric plasma (CAP), combined with ultrasound-assisted extraction (UAE) were employed for the recovery of phenolic compounds from peach peels (PP). PP phenolics extraction was optimized in terms of extraction duration, ethanol concentration, solvent: solid ratio and ultrasounds pulse duration using response surface methodology. In addition, one-factor-at-a-time methodology was used to evaluate the effect of PP pre-treatment employing various CAP conditions on phenolics recovery. Total phenolic and flavonoid content, antioxidant activity and chlorogenic acid concentration were measured in the extracts. The optimum UAE conditions were determined to be 17 min extraction duration, 53% v/v ethanol, 70: 1 mL/g solvent: solid ratio and pulse duration 0.9 on – 0.1 off. CAP pre-treatment enhanced the phenolics yield and antioxidant activity of the extracts. The present study highlights the potential of PP valorization, paving the way for the future application of peach bioactive compounds as potential natural antioxidants in functional food products.
