In this study, 5‐hydroxymethylfurfural (5‐HMF) was synthesized from whey using sulfamic acid (SA) under hydrothermal conditions. Process optimization was performed using the response surface methodology. The highest yield (27.7 mol%) of 5‐HMF was obtained from whey at 185°C using 0.3 M whey (as lactose) and a SA/substrate ratio of 0.6 M after 20 min. The combined severity factor (CSF) analysis revealed that 5‐HMF yields peaked at CSF values of 3.1 for whey and 2.9 for lactose, followed by a sharp decline with an increase in the CSF value. These findings demonstrate the potential of whey, a byproduct of the dairy industry, and SA as an efficient catalyst for the sustainable synthesis of bio‐based valuable chemicals in the industrial sector.
