The article explains the relevance of the copula and the theory of extreme values in the evaluation of agricultural risk. In the classical approach, the multiple risks allow a diversification of the risks, bringing useful financial compensations within the exploitation or the sector. This approach is widely used in portfolio management according to the central limit theorem (CLT). The article outlines and illustrates the cases where the CLT is not applicable because of the form of the statistical links, the loss evaluation or the extreme values
