Abstract

Which genetic levers for an improved amino acid balance in grain legume seeds ? Although some factors called “anti-nutritional factors” for feeds have been reduced in seeds of the different varieties of legume crops, and although nutritional quality is globally good, some elements of seed protein composition remains to be improved and stabilized for a better amino acid balance. The genomic regions controlling seed protein composition have been identified in pea and the identification of the underlying genes accelerated using a translational approach between this species and the model legume M. truncatula. These data offer the opportunity of defining molecular markers to assist in the selection of varieties improved in their nutritional value for animal or human nutrition. A large natural or induced genetic diversity for protein and amino acid composition exists in the legume species cultivated in France (e.g. pea and faba bean) which makes possible to obtain new protein profiles. The molecular tools and genetic diversity that can be mobilized to better adapt raw materials to different food uses are presented.
