Abstract

In order to give positive perspectives to farmers and the beef industry the Effiviande project has proposed new sustainable and profitable production methods through a co-constructive approach. The technical functioning of these new systems was modeled, showing the expected reduction in carcass weight must be accounted for in the contractualization process through a rise of selling prices. The monitoring and analysis of 40 pilot farms showed the innovative systems perform evenly or better than the average in different large samples of beef farms. In addition, the performances of young cattle fattened with a ration based on grass fodder and concentrates from agri-food industry by-products were measured. Crossing with an early Angus breed makes it possible to obtain lighter carcasses (360 kg) with good fattening conditions (Body Condition Scoring (BCS) of 3.5) while reducing the fattening time. Finally, the work made it possible to build a "precocity" technical index adapted to meat production systems for identification and selection of early animals.
