The present challenge of suckling cows operations is to produce in quantity and quality while being more respectful of the environment. The work carried out in this project fit into this issue and aimed to characterize the different trade-offs 'production-environment' based on different operations being implemented in major beef cattle systems of the Charolais area of the Centre of France. This work highlighted the impacts of the practices implemented by farmers (feed systems and types of animal products) and field structures on the three main factors of energy consumption and emissions of GHG in farms bovine meat (fuel, food and fertilizer). They showed that beef cattle systems, breeder or breederfattener, based on grassland in the same soil context, could have different environmental impacts (energy consumption, emissions of GHG and occupation of space) in connection with animal and feed management strategies, themselves depending on the area available for the flock and the nature of the swards.
