Not only the quantitative supply of fatty acids, but also the various ratios in different fatty acid classes and series, give rise to nutritional intake recommendations. These recommendations aim to meet the physiological requirements but also to contribute to the prevention of a number of pathologies, such as type 2 diabetes and cardiovascular diseases, both originating, at least partly, from the metabolic syndrome. After some considerations on the biochemistry of fatty acids, their involvement in type 2 diabetes and cardiovascular diseases, and their metabolic functions, the review will focus on the role of polyunsaturated fatty acids in the physiopathology and the prevention of the metabolic syndrome. The possibility of new metabolic regulations will also be addressed.
