Ageing is characterized by a gradual loss of muscle proteins (sarcopenia), which is ultimately responsible for decreased mobility and autonomy. Sarcopenia also reduces the ability of the elderly to cope with nutritional, infectious or traumatic stresses, whose incidence increases in ageing. This loss of muscle proteins results, in part, from a decreased physical activity but also from a decrease response to anabolic stimuli during food intake, especially amino acids. Several nutritional strategies have been proposed and all are based on the modification of the quantity and quality of amino acid intake for the elderly. Among them, the “protein pulse feeding”, fast digested proteins, leucine-rich proteins and the modulation of the oxidative stress and low grade inflammation are very promising. In this context, different dairy proteins have been tested during aging according to their qualitative (amino acid composition) or/and physical (solubility) properties.
