The apple is a major fruit production in France. In 2013, France was the 7th world producer with more than 1.7 million tons. France has a worldwide clientele, which it is to be delivered throughout the year with a no-default product, including without superficial scald, darkening of the skin, while maintaining a satisfactory quality. Technical and societal changes made necessary to find new solutions for the storage of fruits without post-harvest chemical treatments. Three solutions were identified: elimination of ethylene during storage, conservation in controlled dynamic atmosphere and treatment with hot water after harvest. From these three solutions, the most promising one is the controlled dynamic atmosphere. It ensures both a good control of superficial scald over several months (until March-April for Granny Smith for example)... with a level of satisfactory quality according to physical and chemical measures or other parameters (quality taste, nutrition...). The other two methods are also of interest, but further work seems necessary to refine their uses.
